At Sow Coffee Project, we understand your desire for decaffeinated coffee that doesn’t compromise on flavour or quality. Our special Sugarcane Decaf combines Castillo, Caturra, Catimor, Typica, and Colombia varietals, all selected for their exceptional quality and unique cup profiles.
Named after the local milling facility in Cauca, this coffee is called Popayan. The rolling hills of the Andes Mountain Range that traverse Cauca provide rich, volcanic soils - ideal conditions for growing coffee.
Grown at elevations between 1,450 and 1,900 meters above sea level, coffee in this region shares the landscape with rainforests, basins, and volcanoes. These features also support the cultivation of sugarcane, potatoes, corn, beans, tomatoes, and more. Local farmers typically grow coffee on small plots of land, usually less than 5 hectares.
Processed using the washed method at the coffee's peak maturity, this coffee showcases meticulous attention to detail throughout the harvest season. The result is a cup with flavour notes of sweet red apple, lively citrus zest, and malt, complemented by dark chocolate. It’s so delicious, you’d never guess it was decaf!
What is Natural EA Decaffeination?
The Natural EA Decaffeination process employs ethyl acetate (EA), a naturally derived solvent from sugarcane, to extract caffeine from the coffee. EA is naturally present in coffee and many other fruits in small amounts.
Here’s how it works:
- The coffee is steamed to remove the silverskin and then moistened to open its pores.
- It is submerged in a solution of sugarcane EA dissolved in mountain water. This allows the EA to remove all the caffeine.
- The beans are steamed a second time to remove any residual EA and then dried to the desired moisture levels.
This process helps preserve the original flavours of the coffee, maintaining its fruit characteristics and complexity.
