Colombia, Tres Dragones Special Release
Granja La Esperanza is a collective of six farms located in El Valle del Cauca and Cundinamarca, owned by brothers Rigoberto and Luis Eduardo Herrera, who come from a traditional coffee family. Their grandfather once owned a large hacienda in the Trujillo region, which was gradually sold off over the decades. The brothers left Colombia in the 1970s to study engineering abroad but returned in 1998 with the dream of reconstructing their grandfather's hacienda and re-entering the coffee farming industry. Under their leadership and forward-thinking vision, Cafe Granja La Esperanza has made significant progress in the last decade, shifting from traditional 'C' market coffees to the more delicate and exquisite varieties that are highly sought after in the specialty coffee industry.
This microlot originates from one of their farms, Tres Dragones (Three Dragons), named after the three innovative mechanical dryers used in the coffee processing. By controlling the drying rate, the Herreras can maximise the quality and intensity of flavours in the final cup.
The farm resembles a garden filled with diverse coffee varietals and is recognised as one of the most progressive and experimental farms in the world. Their approach is similar to fine wine-making, where varieties are selected for their flavour attributes rather than their disease resistance. Numerous innovations have contributed to the excellence of their coffee. For example, a carefully selected group of pickers is trained to harvest only the ripest cherries and is paid by the day, rather than by weight, to discourage the collection of unripe fruit.
Rigoberto describes the three pillars of their coffee quality control as "The Genetic Material of the Variety, the Terroir, and Human Talent." Among these, the people who work at Granja La Esperanza are considered the most valuable resource. This enlightened approach extends further: every delivery to the mill is tested with a brix meter to measure the sugar levels in the fruit, similar to wine industry practices. The processing and drying can then be adjusted accordingly. There are actually 95 different quality hurdles that the beans must pass from nursery to port! This tremendous investment of human resources, time, energy, and money can only be achieved through complete dedication.
