Oscar and Francisca Chacón are proud third-generation coffee producers, and for them, coffee is not just a family heritage - it embodies their passion and dedication. Deeply committed to quality and innovation, they have emerged as pioneers in Costa Rica's coffee scene, being among the first farmers in the country to specialise in Honey and Natural process coffees.
In 2005, after years of supplying their coffee cherries to a cooperative at the general market price, they made the bold decision to embrace the "micromill revolution" by investing in their own depulper. This strategic move allowed them greater control over both the quality of their coffee and the prices they received for their harvests. "At first, we didn't know what we were doing," Oscar admits. "We were just experimenting." This experimentation has since led to some of the most exciting and unique flavour profiles in the coffee world, with the Chacóns now producing a diverse range of Honey process coffees, expertly manipulating drying times to create distinct tasting notes.
Innovation was born out of necessity when a devastating earthquake in 2008 disrupted electricity and water supply in their area during the harvest season. Facing challenges in running their depulpers and washing the mucilage for washed lots, Francisca drew upon her knowledge of African coffee production to devise a solution. She quickly constructed raised beds on their property, which allowed them to produce Natural lots. This innovative approach gained the attention of Cafe Imports’ founder, Andrew Miller, helping to establish their reputation in the specialty coffee community.
The Chacóns cultivate their coffees across several farms, including Calle Liles, Calle San Juan, Los Angeles, Los Pinitos, Sabana Redonda, Sabanilla, San Luis, and Calle Lajas.
About the Perla Negra:
The Perla Negra is a remarkable example of their work, produced using a meticulous natural process. Ripe coffee cherries, selected for their high Brix content, are placed on raised beds in a thin layer to bask in the sun. After a week, the beans are moved to a shaded area to rest before being transferred to a greenhouse patio for further dehydration. This slow drying process spans 22 to 30 days, during which the cherries are carefully rotated twice a day, ensuring an optimal flavour profile. The dedication to detail in each step demonstrates the Chacóns' unwavering commitment to producing extraordinary coffee.
